Food Equivalents & Substitutions Part II

This is the second part of my collection and some of the information is quite old and that I find quite interesting!!

Chicken cooked 5 lbs.= 4-5 C.
Chicken cooked and meat removed from the bones 5 lbs.= 1 1/4 lb.

Chocolate 1 lb.= 16 sq. (16oz.)
                  grated 1 lb.= 3 1/2 C.
                             1 oz.= 4 T.
                  melted 1 lb.= 2 C. scant

Citron dried and chopped 3 oz.= 1 C.

Cocoa 1 lb.= 4 C.

Coconut shredded 1 lb.= 7 C.
Coconut moist canned 1 lb.= 5 C.

Coffee coarse ground 1 lb.= 4 3/4 C.
            fine ground 1 lb.= 5 C.

Corn canned 1 lb.= 1 3/4 C.
Cornflakes 1 lb.= 16 C.
Cornmeal 1 lb.= 3 C.
Corn  syrup 11 oz.= 1 C.
Corn  syrup 1 lb.= 1 1/3 C.
Cornstarch 1 oz.= 3 T.
Cornstarch 1 lb.= 3 C.

Crackers broken 1 lb.= 2 1/2 C.
Crackers Graham 1 lb.= 48 crackers
Crackers soda 1 lb.= 104 crackers
Cracker crumbs fine 10 oz.= 4 C.
Cracker crumbs fine 2 1/2 oz.= 1 C.

Cranberries raw 1 lb.= 4 C.
Cranberries cooked 1 lb.= 4 C.
Cranberry sauce jellies 1 lb.= 2 c.

Cream of Tartar 1 oz.= 3 T.
Cucumbers diced 1 lb.= 3 C.
Cream of wheat 1 lb.= 2 2/3 C.

Dates 1 lb.= 2 1/2 C.
Dates pitted 1 lb.= 3 C. or 50-60 medium

Eggs 30 dozen case 41-13 lbs.=360 eggs
Eggs hard cooked 1 lb.= 8 eggs
Eggs hard cooked chopped 8 eggs= 2 C.
Eggs dried 1 lb.= 4 C.
Egg whites dried 1 lb.= 8 C.
Egg yolks dried 1 lb.= 4 3/4 C.
Eggs 4-5 whole= 1 C.

Flour barley 1 lb.= 4 C.
          rye 1 lb.= 4 C.
          white all purpose 1 lb.= 4 C.
                                       1 C.= 4 oz. or 1/4 lb.
          whole wheat 1 lb.= 4 C.
                               1 C.= 4 4/5 oz.
Soya 1 lb.= 5 C.
Cake sifted 1 lb.= 4 1/4 C.

Lard 1 C.= 1/2 lb.

Noodles raw 8 1/2 C.= 1 lb.
              cooked  3 qt.= 4 lb.
Macaroni 1" pieces raw 4 C.= 1 lb.
              cooked 2 3/4 qt.= 5 lb.

Spaghetti raw 4 C.= 1 lb.
                cooked 1 lb.= 2 1/3 qt.= 3 lb. 14 oz.

Rolled oats uncooked 4 3/4 C.= 1 lb.
Rice raw 2 C.= 2 lb. and 10 oz.
               
Salt 1 1/2 t.= 1 oz.

Sugar granulated 2 1/4 C.= 1 lb.
          cubes 96-100= 1 lb.
          brown packed 2 3/4 C.= 1 lb.
          sifted powdered 3 1/2 C.= 1 lb.

Tea 6 C.= 1 lb.

Vanilla 2 oz.= 4T.= 12 t.
