Hot Bacon Salad Dressing with Charlies' Salad from the old Lazarus Resturants

This salad is adapted from one that was featured on the menu at the old Lazarus Restaurant (now Macy's) and a big favorite of mine in the years I worked there.  The furniture department was just around the corner there on the second floor and my office was nestled right in that corner so it was really handy for a meal at my desk.

Today I made up a double batch of the dressing as it keeps well and is good on any salad,  especially spinach or my version of the Charlie!

Salad Ingredients per Each Serving:

2 C. torn romaine
1 C. torn spinach
1/4 C. provolone cheese cut in matchsticks
1/4 C. croutons
2 T. sliced mushrooms (this was in the Lazarus version, I omit and sometimes add tomato)

Combine the greens, mushrooms if using or other vegetables of your liking, and cheese on a plate and top with croutons.  Dress with Charlies' hot bacon  dressing and enjoy.

Charlie 's Dressing Ingredients:

1/4 pound bacon diced
1 large onion diced
1/4 t. poppy seeds
1/4 t. celery seeds
1/4 t. basil leaf
1/4 t. chives
1 1/2 C. packed brown sugar
1 1/2 C. cider vinegar
1 C. oil

Fry the bacon until just crisp then add the onion and cook until tender.  Add the seasonings, sugar, and vinegar.  Bring to a boil.  Turn off and stir in the oil.  Serve warm on salad greens.  Store covered in the refrigerator and reheat as needed.

    Your mentioning Lazaurs sure brings back memories. Growing up the nearest one was a couple hours from home and Mom would often gather everyone up and drive up there for some shopping (which we hated as kids).

    I can remember once visiting my aunt at OSU for a "little sister" weekend. I rode up there myself on a Greyhound bus and was scared to death. My aunt took me to Lazarus for a piece of warm apple pie served with cinnamon ice cream Yum! Funny how the food is what I remember most.

  4. I am so happy to have reminded you of the apple pie and cinnamon ice cream they served!! I loved the cinnamon ice cream over the peach crisp!! So I am right there with you on memory lane. Food seems to me to be the warp threads in the fabric of our lives and it winds through our families, friends, good times and bad.
