Criss Cross Peanut Butter Cookies, Small Batch a Family Favorite Comfort Food.

Old Fashioned Comfort Food, Criss Cross Peanut Butter Cookies.
Now that for the most part there is just Brian and I it is nice to make smaller batches of cookies.  There was a time I always doubled even the largest recipes!!  Now I only do that when my intent is to mail some off or give to share apart from the immediate four walls of my home.  This batch will make enough for Sunday dinner's dessert with a few to spare.  Mike and Julie and the girls will be here for Swiss Steak and Mashed Potatoes and this cookie will be just right to end our meal.

Ingredients for Criss Cross Peanut Butter Cookies, small batch:

Preheat the oven to 375 degrees F.   Prepare the cookie sheets with sil-pat mats or parchment paper and set aside.

1/4 C.  soft butter
1/4 C. shortening
1/2 C. peanut butter
1/2 C. sugar
1/2 C. brown sugar packed
1 lg. egg

Combine the above ingredients in a mixing bowl and beat with an electric mixer until fully combined.

1 1/4 C. flour
3/4 t. soda
1/2 t. baking powder
1/4 t. salt

Mix the dry ingredients together well and add to the batter.  Mix on lowest speed until a stiff dough is formed.  Scrape the sides of the bowl well.  Using a teaspoon scoop out well rounded portions and form into walnut sized balls with your palms.  Place 2" apart on the prepared cookie sheets.

Place 1/4 C. sugar in a small dish or tea cup.  Dip the tines of a table fork into the sugar and push into each cookie dipping in the sugar each time before pressing again.  Repeat on all of the cookies a second time forming the criss cross pattern.  Bale 10-12 minutes.  Remove from the oven when set and let sit in the pan about 5 minutes before removing to cool.  Yield 2 dozen cookies.
