Yes, I have been going a bit overboard with the apples lately......I admit. But they are so good, so good for you, and I was Blessed with so many this year! This is probably my last posting on the subject.....well maybe.....we'll see.
Anyway.
Ingredients for Cinnamon Candy Apple Butter in the Crock Pot:
5 pounds of cooking apples, I used Golden Delicious
1 1/2 C. brown sugar
1/4 C. Red Hot Candies. or Cinnamon Imperials
1/2 t. cinnamon
1/2 t. salt
1/4 t. nutmeg
1/8 t. cloves
1/4 t. ginger
2 C. apple juice
1 t. vanilla
Peel and core the apples and turn the slow cooker on high, add the apple juice, then the apples, sugar, and spices. Cover and cook for about 1/12 hours. Stir well and reduce the heat to low. With the lid set ajar continue to cook for 7-9-hours. Add the red hots and the vanilla and stir well. When the candy has melted use a stick blender to even up the consistency or process in food processor or blender a batch at a time.
Fill sterile jars leaving 1/4" head space and wipe the rims well with a clean damp cloth. Lower into boiling water bath and process for 10 minutes after returning to a boil. Cool and check to be sure the jars have sealed. Store in a cool dry place for up to one year. Yield 6 half pints.
This was my all time favorite as a child. My Grandma would make and can a batch and my mom would have to hide it! We tore through that stuff! Another yum to you and your amazing food!

ReplyDeleteApple butter is great any place you would eat a jam or a jelly. I love it on hot corn bread, toast, biscuits. It is also mixed with spices and mustard for a ham glaze.(I posted this one too, "Apple Butter Glazed Ham".) Two weeks ago I made apple butter mustard and am looking forward to trying it slathered on a ham or cold cut sandwich.

I loved using the slow cooker [I used 2 crockpots-the second batch I used brown sugar Splenda] for this recipe! This was my first time making apple butter and it tasted great!
