Roasted Golden Beets Are Easy and Delicious.

These beets start to brown around the edges and are done in about 30 minutes.
Yesterday at the grocery I grabbed a big bunch of golden beets to try.  I love purple beets but they had both so I couldn't resist! 

A mandolin makes quick work of Julianne cutting the beets.
Being I am still on a salad craze I thought I would just peel these, run them down the mandolin in a Julianne cut and roast them.

Ingredients for Roasted Julianne Golden Beets:

4 fresh golden beets washed peeled and shredded or Julianne cut
2-3 T. olive oil
pinch kosher salt
pinch fresh ground pepper

Preheat the oven to 400 degrees F.  Place the oil in a heavy pan or a baking sheet and add the beets.  Sprinkle with salt and pepper and toss lightly with your fingers to coat and mix well.  Roast uncovered for 30-35 minutes until the beets begin to caramelise around the edges and smell delicious.  Serve warm or add to fresh greens for a luscious wilted salad.

Warm Chopped Salad of Roast Golden Beets:

2 C. shredded lettuce of your liking
1 recipe warm roast beets
2-3 T. homemade Italian Dressing (Or other dressing of your choosing.)

Place the lettuce in a flat shallow dish or platter.  Top with the warm roasted beets.  Drizzle with dressing and serve warm and wilting.  I think a few chopped scallions and a bit of feta cheese would be yummy and plan to try another day.  Yield 2 servings.
