Washed and torn leaf lettuce and sliced spring onions fresh picked from the garden. |
Ingredients for Wilted Lettuce Salad:
2-3 quarts washed and torn leaf lettuce
4-5 sliced spring onions
2-3 T. bacon drippings
1/4 C. cider vinegar
1/4 C. sugar
1/2 C. water
kosher salt
fresh ground black pepper
Place the torn lettuce in a large bowl and top with the onions.
Melt the bacon drippings in a skillet and add the rest of the ingredients over medium heat stirring until it comes to a boil and the sugar is dissolved. Pour the hot dressing over the lettuce just before serving and toss well. The lettuce will wilt a bit. And that is a good thing!

Awesome! I hope this is the one. Or at best close enough that you can "tweek" and get there! Thanks for your comment! Diane
The one we made was similar to this only we fried a few strips of bacon until crisp and removed them from the pan and crumbled them over the lettuce then we put the onions in the bacon grease and fried just until starting to tenderize then added the vinegar sugar and water to the pan and brought it to a boil and then cracked and egg into it and stirred it until the egg was cooked and poured it over the salad. Always make sure you put in about twice as much lettuce as you think you will need because it really shrinks and everyone will want to eat lots of it!
