Today I don't want to be bothered with cooking too much so last night I pulled out a rump roast I had frozen and set it to thaw. This morning after seasoning it with salt and pepper I seared it and set it into my crock pot. Now the fun!! I emptied half of a bottle of hot peppers and half of the brine (about 1/2 cup of each) over the top of the beef, set on the lid and turned it on. Now I will go about my day and let this lovely concoction slow cook until this evening.
Wow. This is delicious and it could not get any easier!!
Ingredients:
1 Beef roast of your liking
1 jar pickled peppers of your liking
salt
pepper
Sear the roast or not!! When our son made this he used chuck and did not. I used a rump and did because of the fat on one side. Plop the roast into a crock pot. Pour in the jar of peppers juice and all or I used 1/2 C. of my own pickles hot peppers ant it was fine.
Heat on high heat to start then reduce to low and simmer until fork tender. Shred the meat and return it to the juices and simmer on lowest setting until time to eat. Top with your favorite cheese or not. I used Provolone and it was great. The peppers have dissolved and the meat is quite spicy but not too hot for me to eat. Serve on buns or hoogie rolls with cheese or other toppings. Yield 6-8 generous servings.

Pork Tenderloin Teriyaki with Fried Apples and Roasted Vegetables
This is a meal we made on the charcoal grill using indirect heat. First the meat was seared for 2-3 minutes a side then moved to the furthest area from the coals which were pushed to one side. Then is cooked for about 15-20 minutes and went into the oven on the lowest setting (170 degrees) wrapped in foil until the vegetables cooked for a total of one hour wrapped in foil over the coals. The apples were cooked on the stove and then turned off until the rest of the meal was finished.
Ingredients for the Tenderloin:
1 pork tenderloin trimmed of silver skin but left whole
1/2 C. Teriyaki sauce
1/2 c. honey
Mix the Teriyaki sauce and honey and pour over the meat in a zip lock bah. Let this marinade for at least 2 hours and up to overnight. Grill until desired doneness and remove from the grill. Let the meat rest 10-15 minutes before carving. Serve atop roasted root vegetables. Yield 2 servings.
Roasted Root Vegetables:
6 carrots washed and peeled
2 potatoes washed and quartered
2 spring onions cleaned and whole
2 T. olive oil
salt and pepper
foil
Make a large square of foil and place the carrots on the bottom. Next layer the onion and potato. Drizzle with oil and sprinkle with salt and pepper. Close the foil to make a pouch. Repeat with another sheet of foil so you have a double thickness. Roast over grill grate on medium heat for 50-60 minutes. Yield 2 servings.
Fried Apples:
5 tart apples cored peeled and cut into eights
1 t. lemon juice
3 T. bacon grease or butter
4 T. brown sugar
1 t. cinnamon
Toss apples in the lemon juice while you preheat pan on the stove. Add the fat and melt. Add the apples and brown sugar stirring to mix. Simmer covered for15 minutes until the apples are tender. Sprinkle with the cinnamon and stir. Yield 4 servings.

Oatmeal WHOOPIE Pies and/or Ice Cream Sandwiches
It is a rather cool day today here, just right for turning on the oven and baking up a batch of cookies for the weekend.
Ingredients for Oatmeal Whoopee Pies:
2 C. brown sugar
1/2 C. soft butter
1/4 C. Crisco
2 eggs
1/2 t. salt
1 t. cinnamon
1 t. baking powder
3 T. boiling water
1 t. soda
2 1/2 C. flour
2 C. quick oats
Filling option #1:
Marshmallow Creme
Filling Option #2:
5 T. flour
1 C. milk
1 t. vanilla
1/2 C. butter
1/2 C. margarine
1 C. granulated sugar
Filling Option #3:
Your favorite flavor of ice cream softened.
The cookies:
Preheat the oven to 350 degrees F. Line cookie sheets with parchment paper or silpat mats and set aside. Prepare cooling racks.
Cream the brown sugar with the butter and Crisco. Add the eggs and mix. Add salt cinnamon, and baking powder and mix. Combine and stir together the boiling water and baking soda, then add it into the mix and blend. Add the flour and oatmeal and mix well.
Scoop the dough onto the prepared pans by rounded heaping teaspoons. Use a small *ice cream scoop if available to achieve very symmetrical cookies. (You need them to match when you put them together with thew filling.) Bake for 10 minutes, watching as not to over brown. Remove from the oven and cool completely before filling.
Filling #1:
Scoop a small amount of the marshmallow fluff onto the cookies, then press the second cookie on top. Freeze immediately if not serving right away, or serve right after filling. (Fluff will ooze.) Optional, roll edges in sprinkles, nuts, cookie crumbs, or mini chips.
Filling #2:
In a small saucepan, whisk flour into milk and heat, stirring constantly, until very thick and paste like. Remove from the heat and cool to room temperature. Stir in the vanilla.
Cream the butter and margarine together with the sugar until very light and fluffy. The mixture will turn very white. You do not want any graininess left. Add the completely cooled milk, flour, and vanilla mixture and beat "the living daylights" out of it. If it looks separated you have not beaten it enough. Beat it until it has the consistency and lightness of whipped cream.
Scoop a small amount onto cookies, pressing a second cookie on the top. Finish filling cookies as above directs.
Filling #3:
Scoop a small amount of ice cream between two cookies and press evenly. If desired roll in sprinkles, nuts, or chips. Wrap well and store in the freezer until needed. Yields 18 servings.
* HELPFUL HINT: Spray the ice cream scoop with non stick cooking spray and the dough will more easily drop out and onto the baking sheet.
Today I made the option 2 filling and it has turned out great as I suspected it might. I just want to add you really do have to beat the daylights out of this. I would say it took 10-15 minutes anyway for the first beating of the sugar and butter and just as long the second time after the milk and flour mixture was added. I would NOT even try this recipe without an electric mixer and would prefer to use a stand mixer as not to have to stand and hold the beaters all of that time using a hand or portable mixer.
