THREE INGREDIENT Chocolate Cherry Cake Box Cake

This is one of those wonderful easy, no brain-er, cakes that is SO awfully good you hate to admit to anyone how easy it was.  This is a 3 ingredient cake!!  A chocolate cake mix of your liking.  A can of cherry pie filling, and however many eggs are called for on the cake mix directions.  No oil or water.  Just mix up and pour into a 9" x 13" pan you have sprayed with non stick cooking spray.

THE VARIABLE HERE IS HOW MUCH YOU MIX.  I used  a mixer and beat 1 minute which beat the cherries into a puree and blended them into the bake.  My son stirred one up by hand and had chunks of cherries and some whole scattered in the cake.  Both were quite to my liking.  You can choose which way to proceed.  This is a dense moist cake.  Bake in a 350 degree oven for 30-35 minutes until done when tested with a bamboo skewer or tooth pick.  Cool and frost with you favorite frosting.  I like chocolate on this but cherry would  be really good too.

This is adapted from a cookbook from my Mother last Christmas,  "PITCH-IN FROM THE PEWS' Christ Lutheran Church, June 2011.
