Aunt Betty's 1-2-3 Cake

I just love when friends and family send me new things they have found and they invite me to try them too.  My husband's Aunt Betty sent me this a few weeks ago and I just got around to trying it out and it is a WINNER!!

You could even make this up and give a Christmas gifts  either the whole recipe or in a small glass jelly jar with the directions to make more and how to mix up and bake.  As a quick and lightly laden (calorie wise) desert it is a find.

NOTE: I do not make any claims regarding calorie or weight watchers points because it would vary according to what brand and what flavors of cake mix you are using.   Others have made statements in the notes sections and I have no way to know if any or all are accurate so please beware.

You simply assemble as follows:

1 box Angel Food cake mix
1 box any flavor cake mix
2 T. water

Directions:

Using a large plastic bowl with a tightly fitting lid or a large zip lock bag, combine the two boxes of cake mix stirring or shaking well.

For each individual serving,  take out 3 T. of the cake mixture and mix it with 2 T. of water in a small microwave safe container.  I used a small coffee mug.  Microwave on high for 1 minute.  You now have your own instant individual cake and it is warm and inviting.  You can top with a dollop of fruit or whipped topping if you like.

Try various flavors of cake mix but it must always be combined with an Angel Food mix.

Keep the mix tightly sealed in an airtight container until used and remember:  This recipe is called 1-2-3 Cake because all you need to remember is 3 T.mix, 2 T. water, and 1 minute in the microwave.

And a big thank you goes out to Aunt Betty!!

Hi There! I tried this and did a coconut cake which I featured on my blog Dishin' With Rebelle! Here is the link if you would like to check it out. It turned out so good and I will definitely be trying more!http://dishinwithrebelle.com/coconut-cake-in-a-mug-new-way/

Made this tonight....it was good! Definitely angel food consistency when cooked but good! I found this recipe on spark people as well and it lists the calorie count as 80 per serving. Would be great with some fresh fruit and whipped cream!

There has been a lot of questions about how many Points Plus this dish is. It is deceivingly posted on Pinterest at 0pp but I measured and calculated the entire recipe and it is in fact, 4 points plus.

Unknown said...

Ladies, ladies.....it would depend on which cake mixes you have chosen how many "points" or calories. Each brand and flavor of cake mix is a variable. So I expect you are all right as rain!!

Thank you for all of your comments. I read them and appreciate them every day. Diane

the heading says 0 points plus- is this referring to weight watchrs?

Unknown said...

I think so. I do not belong to Weight Watchers but that appears to be the case in reading all of the comments thus far.

I want to eat that cake....

How is this only 0 points plus... did someone calculate it???

Unknown said...

I found the same recipe only using 1/3 C cake mix and 3 T. water. Is yours moist enough with 2 T. water?

Unknown said...

If I remember correctly there are 5 1/3 tablespoons in 1/3 cup so 3 tablespoons of water is way less ratio than is 2 tablespoons of water to 3 tablespoons of the mix. And, after all, I could not then have called it "Aunt Betty's 1-2-3 cake after my hubby's Aunt Betty! Thanks for all of your comments. I love to read them all.

I also found via pintrest and I LOVE IT. I have turned all of my family and friends on to it also. It is so versitile. Everyone can be happy. As for those who have made comments about "not the best", etc, I find that is so unfair. This is a cake that you can make in a minute in the microwave.....exactly what were they expecting. Everyone who has tried mine, LOVE IT ALSO!! THANKS FOR SUCH A GREAT AND SUPER EASY AWESOME EATS!!!

In case anyone needs to count the calories, it is about 110 per serving. Any additions, like icing is not included in that total.

Question: Have you tried this without the "Angel Food Cake mix? I am sorry if this seems like a "stupid" question. Thank you and have a great evening!!!

No, I had not thought of that but I do give a chocolate cake in a mug from scratch recipe in this blog that is really good. I liked it anyway!!

Thank you all for your comments! I love to read each and every one of them.

I just mixed together a Chocolate cake mix with the Angel Food. Just thought your readers would like a storage idea: The mix fits perfectly into a 618 g size Nesquik container. The kids just finished the container, so I washed and dried it completely, scooped the mix into the container, and snapped the lid on tightly. :o)

Great tip!! Thank you for sharing it. I welcome anything anyone can add to make life easier, or save time, or give use to something we might have cast off. Hey I just love your comments!

According to ww mobile this is 2 points per serving, not zero as some of the comments on Pinterest have pointed out..just wanted to let everyone know so they don't go eating to many...mine was delicious :) with some pudding/ cool whip frosting :)

Rae said...

Pretty good. Super easy and quick. I sprayed my mug with cooking spray before putting the ingredients in it. The mini cake came right out of the mug. Would be good with a tad bit of frosting.
Thanks!!

I just bought my cakes mixes...I hope this isn't a dumb question but here goes.Do you use a level measuring spoon for the tablespoons? Thanks for this recipe!!

Unknown said...

It is a very good question. I just scoop using a tablespoon and shake it off a bit until it is pretty level and then use the same spoon to measure the water, all the way full to the top of the spoon with the water. Hope you like this a lot. Thanks for your question. Diane

weighed out the ingredients in grams and found there are a total of 28 servings per mixed bag. I plugged it into WW's recipe builder and came up with 3 WW Points+ per serving. Hope this helps, and thanks for the guilt free fun.

I too would like to know if this can be cooked in a convection oven as I dont use a microwave.

Unknown said...

Sorry Brandy I do not know. I do not own a convection oven to try it either. Sorry!! Perhaps one of our readers will try it and report back.

Thanks,
Diane

I make it with chopped up andies mints and have also used chocolate chips. Once cooked i poke holes and put in some choc fudge topping and serve with ice cream.
yum yum

I love this recipe. I mix the two cake mixes and four cups of water and place them in mason jars so all I need to do is pour the liquid mix into a bowl and put it in the microwave. Would the jars need to be refrigerated or would they last a long time if kept out?

Susan said...

I would so love to make this but I need to find a way to make it in a conventional oven. Has anyone ever tried it? Any suggestions?
Thank you

I am kind of disappointed in this post. The cake turned out good enough, but the problem is that the post says it is only zero points plus for WW, but then I find out when reading the comments that some have calculated it to be anywhere from 3-5! There is a huge difference there! Perhaps the original blog post should be changed, because otherwise some may feel betrayed or sabotaged in their attempts to follow WW strictly.

Juliana said...

I should clarify - the pinterest post I found on this said ZERO WW POINTS in the caption. It doesn't say that in the blog, but perhaps some kind of PS that says "If you saw this on pinterest .... blah blah blah"

Unknown said...

I just captioned below the top photo that I have never given or made claim to a calorie count on this because it would depend on the count on the combination of the 2 cake mixes you choose. Many have given their statistics based on what they selected. There are also claims given on Pinterest which I do not have any faith in or ability to change so please beware of these facts. Thank you all! Diane of thehiddenpantry.blogspot.com

I made this little cake the used it in a parfait by layering 100 cal Jello chocolate pudding with the cake and topped with nonfat cool whip. Delicious!

Made this a few minutes ago and it turned out awesome! I don't know what people were talking about saying it came out a weird texture! I mixed yellow cake with the angel food and topped it with a dollop of chocolate icing. I actually liked the texture more than normal cake.It was so fluffy and soft! I made a double recipe and it still wasn't enough to satisfy my craving though, I can't imagine only doing the 3T/2T. But other than that it was great!

I made these in the oven yesterday. I used a pan for 12 mini-bundt cakes and it totally worked. The amount of batter for 1 mug cake made 3 mini-budnts. As for instructions, I baked it at 350 degrees, but honestly didn't time it. Probably 5-10 minute range so give it a try and keep an eye on them. :)

So I discovered this on Pinterest a few months ago and i love it! It's great, especially for a small, low cal sweet fix for those on diets like I am. My favorite is Funfetti mix, but I am going to try Red Velvet Cake mix too. For some reason I thought I couldn't use RVC in this particular concoction, but when I checked again there wasn't anything about it. I'll try it and let you know. Thanks!

this looks amazing, can't wait to try it.. I'm trying to figure out nutrition facts, I'm on MFP so that will do it if I know how many servings this yields - do you know??

Simply Perfect for me & hubby. Made the mix & divided into smaller containers. As flight crew member he made sure to pack the mix for a sweet late nite snack in his hotel room.

Love this mix. My son-in-law is being deployed to Japan soon and I am going to order small ziploc type pouches and premeasure the mix into each one and send as a care package for him to share with his battalion. The company I contacted to see what size of their bags I would need responded that they were not sure what size would be needed for the 3T so they are sending me some samples of various size bags to try. I am hoping to be able to put 2T water in the bag and mark the level on the bags with a sharpie and include instructions to dump the powder mix in their microwave safe container and then fill bag to line with water and pour in, mix, and then microwave for 1 minute....I hope I am able to be successful at this. I am sure it is much healthier than the premade snack cakes and I know they are much tastier! I am also going to try and find a powder whip topping mix that only requires water so that they can mix it up to top their treats.

For all of you WW fans out there, I have official ppts info! I used Betty Crocker Angel Food and Betty Crocker Super Moist Dark Chocolate. I weighed and measured everything and calculated that there are 31.5 servings in a bag, and it's 3 ppts per serving -- with just the cake mix and water. Add ppts for any additional ingredients. Hope that helps!

Love this! Before I cook it I add a TBSP of Nutella into the mix. When it comes out of the microwave I turn it onto a small plate. It's like a molten chocolate cake. Thanks for the recipe!

I have been making the 3-2-1 cake since I joined weight watchers two years ago. I add fruit to the bottom of the bowl before adding the cake mixture. I always add some sliced banana and some other fruit. I have used a small amount of blueberries, strawberries, canned mandarin oranges (rinsed), canned peaches (rinsed), or any other fruit you have. You will need to cook it in he microwave for a longer period than one minute. I usually let it cook for one and a half minutes. Since fruit is free it shouldn't add any additional points.
This is delicious - you can add a dollop of "cool whip" free. ENJOY!!

WW points plus is 2. I don't know about smart points.

I just tried making this cake, one with 2 tbs water and one with 1 tbs water and 1 tbs sour cream... I think the sour cream one is a little richer.
