Cowboy Steak Sandwiches, Hearty, Quick & Easy Supper Size Sandwich

Possibly the very best and easiest steak sandwich ever.
Again one of my sons served up a KILLER meal!  He called this his "Cowboy Steak Sandwich" and was it ever good.  He made them using minute steaks.  I couldn't wait to make them myself using the fresh cube steak I buy from Rivertown Butcher Shop, as it always is tender, lean, and just perfect.  Not always the case elsewhere.

Well anyway my boy used half minute steak and half pork cutlet and it was delicious,  I used all beef as it was what was convenient,  You can be sure it is good made with either or both.  This is a very fast preparation, under 10 minutes, and only calls for a few pantry staples.

Ingredients for Cowboy Steak Sandwiches:

1 or 2 large onions diced (if you love onions use 2)
1 stick butter
2-3 pounds minute or cube steaks. pork cutlets, or combination
seasoned salt  ( I used Lawery's)
1/3-1/2 C. Worcestershire Sauce (depending on the total amount of steak you use)
6-7 shakes of hot sauce
4-6 Deli, French, or Hoggie Rolls toasted
optional cheese if desired

Melt 2 T. butter in a large skillet and saute onions until tender, set aside.  Using a sharp knife slice the steaks across the grain into 1/4" strips.  Season with seasoned salt.

Add the remaining butter to the skillet and over high heat add the strips of steak. Cook on each side for 1 minute and turn.  Cook the second side for 1 minute.  Add the Worcestershire Sauce and stir.  If it becomes dry add a little more butter if needed.  Stir well to incorporate and keep warm over lowest heat while you split and toast the rolls.  Top with thin slices of your favorite cheese and serve immediately.  Expect praise and be prepared to serve these again!!
