London Broil & Tequila Marinade, Smashed Potatoes, Green Salad, Grilled Chicken, & Pumpkin Pie, something for everyone tonight!

Tonight it is Mike and Julie (they live 12 houses away so it is easiest for them) and my precious Granddaughters, Emily and Katie are coming for Sunday night supper.  Mike surprised me and bought a 4 pound London Broil by for me to fix.  I have lightly scored both sides of both pieces and set it in a marinade for the day.

Ingredients for Tequila Lime Marinade:

Juice of 3 fresh limes
1/4 C. Tequila
1/4 C. Olive Oil
1 t. salt
1/2 t. black pepper
3 large cloves of fresh garlic chopped



Combine all of the ingredients in a large zipper freezer bag. (They are stronger and less prone to leak.)  add the scored London Broil and massage a bit to get the marinade into all of the crevices.  Set the bad and contents sealed into a flat dish and refrigerate turning the bag every couple of hours.  I marinade 6-8 hours for this large portion of steak.

Preheat the broiler to 550 degrees F.  Broil 2-3" from the heat for 4-5 minutes per side.  Slice thinly on the bias, against the grain of the steak.  Serve on a warm platter. (I slice into a warm covered casserole until serving time.)
