Triple Chocolate Drop Cookies

Cocoa, White Chocolate, and Semi-sweet Chocolate make these cookies a triple delight!
One of my daughter-in-laws,  one of my granddaughters,  and one grandson are especially over the top chocolate lovers.  But all of us like chocolate so when I saw this recipe I was sure with a bit of adaptation it would work for our family.  It originated with Ree Drummond the Pioneer Woman Blogger.  But again, I have done a bit of tweaking!

Ingredients for Triple Chocolate Drop Cookies:

2 1/2 C. room temperature soft butter
2 C. sugar
2 lg. eggs
1 T. vanilla
2 C. flour
3/4 C. cocoa
1 t. baking soda
1/2 t. espresso powder, optional
1/4 t. salt
1 C. chopped white baking chocolate
1 C. white chocolate chips
2 C. semi sweet chocolate chips

Preheat the oven to 350 degrees F.  Prepare the baking sheets with either parchment paper or silpat baking mats and set aside.

Using an electric mixer cream the butter and sugar until fluffy, scraping the sides of the bowl often.  Add the eggs one at a time mixing after each.  Mix in the vanilla and espresso powder.



Sift together the flour, cocoa, baking soda, and salt.  Then add in batches to the creamed mixture mixing until just blended after each addition.  Stir in the chocolate pieces until well incorporated.   Drop by tablespoonfuls onto the prepare baking sheets and bake until done about 8-9 minutes.  Cookies should be soft and chewy.


Cool on racks.
Yield 50 cookies.
